TARTE A LA VIANDE, GIROLLES & ROQUEFORT
This delicious meat pie with roquefort and chanterelles takes some time to make but we don't always have time to make a pie from scratch, so in that case, you could of course just bye a pre made pastry dough.
On se fait plaisir avec cette tarte pleine de saveurs... si vous n'avez pas le temps de faire la pâte, vous pouvez toujours l'acheter tout prête.
Pour 6 parts / moule à tarte 28 cm de diamètre
6 dl / 400 g de farine
200 g de beurre froide coupé en petit morceaux
4 càs d'eau froide
2 pincées de sel
1 oignon jaune finement coupé
350 g de viande hachée
120 g de roquefort
100 g de girolles
1 poignée de persil grossièrement coupé
1 càs de concentré de tomate
1/2 verre d'eau
1/2 bouillon de boeuf

huile d'olive
beurre
20 cl de crème liquide
2 oeufs
sel
poivre
Versez la farine et le sel dans une saladier, ajoutez et dispersez le beurre avec le bout des doigts jusqu'à ce que cela soit granulé.
Ajoutez l'eau et pétrissez la pâte jusqu'à l'obtention d'une boule homogène.
Aplatissez la boule dans le moule à tarte avec les mains.
Piquez la pâte à l'aide d'une fourchette et mettez au frais pendent 30 minutes
Préchauffez le four à 200°
Mélangez le roquefort avec le persil.
Dans une poêle, faites revenir l'oignon avec une noix de beurre et un filet d'huile d'olive. Mettez de côté.
Dans la même poêle, faites cuire la viande hachée.
Ajoutez le concentré de tomate, ensuite l'eau et le bouillon. Laissez mijoter jusqu'à ce que l'eau réduise.
Rajoutez les girolles, salez et poivrez.
Pour terminer, incorporez le roquefort et l'oignon et laissez fondre en remuant.
Préchauffez le four à 200°
Avant de mettre les ingrédients dans la tarte, faites-la pré-cuire environ 15 minutes.
Pendent ce temps, mélangez oeuf avec la crème, salez et poivrez éventuellement.
Mettez la viande dans le moule et terminez en remplissant avec la crème.
Faites cuire au four 30 à 40 minutes.
Servez avec une salade... bon Appétit!

4 tablespoons cold water
a pinch of salt
1 onion finely cut
350 g minced meat
120 g roquefort cheese
100 g Chanterelles
a handful of fresh flat-leaf parsley, finely chopped
1 tablespoon tomato paste
100 ml water
1/2 beef stock cube
Salt

olive oil
a knob of butter
20 cl cream
2 eggs
salt
pepper
Put the flour and the salt into a large bowl. Using your fingers, work in the butter until the mixture resembles coarse crumbs.
Add the cold water and work with your hands until the dough comes together.
Press out the dough in a pie dish with your hands and then prick with a fork.
Refrigerate for 30 minutes.
Preheat the oven to 200°
Mix the roquefort with the parsley.
In a frying pan, heat a knob of butter with a trickle of olive oil.
Fry the onion for a couple of minutes and remove.
In the same pan, fry the meat.
Add tomato paste, then the water and stock cube. Let it simmer, stirring occasionally until all the water is absorbed.
Add the chanterelles, onion, salt and pepper. Fry everything together then add the roquefort cheese and let i melt.
Before filling the pie, pre-cook it for about 15 minutes.
Mix cream, egg, salt and pepper.
Now, fill the pie shell with meat and chanterelles then pour the cream over it.
Bake in the oven at 200° approximately 35 minutes.
Serve with a salad and enjoy!
